Spiced Potato and Pea Paratha
Whole wheat flatbread stuffed with spiced potatoes and peas.

- Boil and mash the potatoes. In a pan, sauté grated ginger and green chilies (if using) in a little oil. Mix with mashed potatoes, peas, garam masala, turmeric, chili powder, and salt. Sauté mixture for 2-3 minutes to enhance flavors.
- Make a soft dough with whole wheat flour, a pinch of salt, and water. Knead well and let it rest for 15 minutes.
- Divide the dough into small, equal-sized balls.
- Roll out each ball into a small circle, stuff with the potato mixture, and seal carefully to avoid any leaks.
- Gently roll out the stuffed paratha to a slightly larger circle, being careful not to tear the dough.
- Cook on a hot griddle with oil or ghee until golden brown and crispy on both sides. Press gently with a spatula to ensure even cooking.
