Greek Pasta Salad with Feta and Veggies
A vibrant and flavorful pasta salad with feta, olives, bell peppers, and a zesty lemon-herb vinaigrette, perfect for a quick and satisfying lunch.
Ingredients
- 250g Pasta Noodles
- 1/2 cup Pasta Sauce
- 1 cup, chopped Mini Bell Peppers
- 1/2 cup, halved Jarred Olives
- 150g, crumbled Feta Cheese
- 1/2 cup, diced Cucumber
- 1/4 cup, thinly sliced Red Onion
- 3 tbsp Extra Virgin Olive Oil
- 1 tbsp Lemon Juice
- 2 tbsp, chopped Fresh Parsley
- 1 tsp Dried Oregano
- To taste Salt and Black Pepper
Instructions
- Cook pasta according to package directions until al dente. Drain and rinse with cold water to stop cooking.
- In a large bowl, combine the cooked pasta, pasta sauce, olives, bell peppers, feta cheese, cucumber, and red onion.
- In a small bowl, whisk together extra virgin olive oil, lemon juice, fresh parsley, oregano, salt, and black pepper.
- Pour the dressing over the pasta salad and toss gently to combine. Chill for at least 30 minutes to allow flavors to meld. Taste and adjust seasoning if needed before serving.
