Spanish Lentil Soup
A hearty and flavorful lentil soup with Spanish-inspired spices.
Ingredients
- 1 cup Dry Lentils
- 6 cups Low Sodium Broth
- 1/2 cup, diced Onion
- 2 cloves, minced Garlic
- 1/2 cup, diced Carrot
- 1/2 cup, diced Celery
- 1 tsp Smoked Paprika
- 1/2 can Diced Tomatoes
- 1 tbsp Extra Virgin Olive Oil
- to taste Salt
- to taste Black Pepper
- 1 Bay Leaf
Instructions
- Rinse the Dry Lentils. Soak for 30 minutes for faster cooking.
- Heat extra virgin olive oil in a large pot.
- Sauté onion, Garlic, carrot, and celery until softened.
- Add Smoked Paprika and cook for another minute.
- Add lentils, Low Sodium Broth, Diced Tomatoes, and Bay Leaf. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until lentils are tender.
- Remove Bay Leaf. Season with salt and Black Pepper. Serve hot.
