High-Protein Italian Potato & Egg Frittata

  1. Preheat oven to 375°F (190°C).
  2. Thinly slice potatoes and dice peppers and onions.
  3. Mince garlic.
  4. In a skillet (oven-safe), heat olive oil over medium heat. Sauté potatoes until they begin to soften, about 5 minutes.
  5. Add peppers and onions; cook until softened, about 3 minutes.
  6. Add garlic and pepperoni; cook until fragrant, about 1 minute.
  7. In a bowl, whisk eggs with dried oregano, red pepper flakes (if using), salt and pepper.
  8. Pour the egg mixture evenly over the skillet mixture.
  9. Sprinkle mozzarella cheese over the top.
  10. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and the cheese is golden brown.
  11. Let cool slightly before slicing and serving. Garnish with fresh basil, if desired.
