High-Protein Italian Potato & Egg Frittata
Ingredients
- 6 large Eggs
- 1 medium, thinly sliced Potatoes
- 1/4 medium, diced Peppers
- 1/4 medium, diced Onions
- 1 clove, minced Garlic
- 50g, sliced Pepperoni
- 1/2 cup Shredded Mozzarella Cheese
- 2 tbsp Olive Oil
- 1/2 tsp Dried Oregano
- Pinch (optional) Red Pepper Flakes
Instructions
- Preheat oven to 375°F (190°C).
- Thinly slice potatoes and dice peppers and onions.
- Mince garlic.
- In a skillet (oven-safe), heat olive oil over medium heat. Sauté potatoes until they begin to soften, about 5 minutes.
- Add peppers and onions; cook until softened, about 3 minutes.
- Add garlic and pepperoni; cook until fragrant, about 1 minute.
- In a bowl, whisk eggs with dried oregano, red pepper flakes (if using), salt and pepper.
- Pour the egg mixture evenly over the skillet mixture.
- Sprinkle mozzarella cheese over the top.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and the cheese is golden brown.
- Let cool slightly before slicing and serving. Garnish with fresh basil, if desired.
