Spicy Ground Beef and Celery Lettuce Cups with Peanut Sauce
Ingredients
- 250g Ground Beef
- 1 stalk, finely diced Celery
- 6 leaves Bibb Lettuce Leaves
- 1 tbsp Soy sauce
- 1 tsp or to taste Sriracha
- 2 stalks, thinly sliced Green onion
- 1 tsp, grated Fresh Ginger
- 2 tbsp Peanut Butter
- 1 tbsp Rice Vinegar
- 1 tsp Honey
Instructions
- Prepare peanut sauce: In a small bowl, whisk together peanut butter, rice vinegar, honey, and 1 tablespoon of water. Add more water if needed to reach desired consistency.
- Brown ground beef in a skillet. Drain any excess fat.
- Add finely diced celery and grated ginger to the skillet and cook for 3-5 minutes, until the celery is slightly softened.
- Stir in soy sauce and sriracha.
- Spoon the beef mixture into lettuce leaves. Drizzle with peanut sauce and top with sliced green onions.
- Serve immediately.
