Maple-Glazed Chicken Thighs with Rice
Ingredients
- 3 Chicken Thighs
- 1.5 cups Rice
- 1/4 cup Maple Syrup
- 2 tbsp Soy Sauce
- 2 cloves, minced Garlic
- 1 tsp grated Ginger
- 1 tbsp Apple Cider Vinegar
- 1 tsp Sesame Oil
- 2 stalks, sliced Green Onions
- 1 tsp Dijon Mustard
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 400°F (200°C).
- Prepare the maple glaze: In a bowl, whisk together maple syrup, soy sauce, minced garlic, grated ginger, apple cider vinegar, sesame oil, dijon mustard and black pepper.
- Pat chicken thighs dry with paper towels. This helps achieve a crispier skin.
- Place chicken thighs in a baking dish and brush the maple glaze over them, ensuring they are well coated. Reserve some glaze for basting.
- Bake for 30-35 minutes, basting with reserved glaze halfway through, or until chicken is cooked through and the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure accuracy.
- While chicken is baking, cook rice according to package instructions. For enhanced flavor, consider using chicken broth instead of water.
- Once chicken is cooked, let it rest for 5 minutes before serving. This helps retain the juices.
- Serve chicken thighs over a bed of rice. Garnish with sliced green onions.
