  2. Prepare the maple glaze: In a bowl, whisk together maple syrup, soy sauce, minced garlic, grated ginger, apple cider vinegar, sesame oil, dijon mustard and black pepper.
  3. Pat chicken thighs dry with paper towels. This helps achieve a crispier skin.
  4. Place chicken thighs in a baking dish and brush the maple glaze over them, ensuring they are well coated. Reserve some glaze for basting.
  5. Bake for 30-35 minutes, basting with reserved glaze halfway through, or until chicken is cooked through and the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure accuracy.
  6. While chicken is baking, cook rice according to package instructions. For enhanced flavor, consider using chicken broth instead of water.
  7. Once chicken is cooked, let it rest for 5 minutes before serving. This helps retain the juices.
  8. Serve chicken thighs over a bed of rice. Garnish with sliced green onions.
