Mediterranean Chickpea, Tomato & Potato Wraps
Wholesome Mediterranean potato chickpea salad wrapped in gluten-free tortillas.
Ingredients
- 1/2 cup, cooked and diced Potatoes
- 1/4 cup Chickpeas
- 1/4 cup, diced Tomatoes
- 1/4 cup, diced Cucumber
- 2 tbsp, diced Red onion
- 1 tbsp Lemon juice
- 1 tbsp Olive oil
- 1 tbsp, chopped Fresh mint
- 2 tbsp, pitted and sliced Kalamata olives
- To taste Salt and pepper
- 1 Gluten-free tortillas
Instructions
- In a bowl, combine cooked potatoes, chickpeas, tomatoes, cucumber, red onion, and Kalamata olives.
- Add lemon juice, olive oil, fresh mint, salt, and pepper. Toss gently to combine. Taste and adjust seasoning as needed.
- Spoon the mixture onto a gluten-free tortilla, being careful not to overfill.
- Wrap and serve immediately. If preparing ahead of time, wrap tightly to prevent the tortilla from becoming soggy.
