Italian Wedding Soup with Ground Beef Meatballs
A hearty Italian soup featuring ground beef meatballs and pantry soup.
Ingredients
- 200g Ground Beef
- 2 cans (approx. 500ml each) Soup
- 1/4 cup Breadcrumbs
- 1 Egg
- 2 tablespoons Grated Parmesan cheese
- 1 teaspoon Dried parsley
- to taste Salt
- to taste Black pepper
- 1/4 tsp Garlic powder
- 1/4 cup Small pasta (e.g., acini di pepe)
- 1 tbsp Olive oil
Instructions
- In a bowl, combine ground beef, breadcrumbs, egg, Parmesan cheese, parsley, garlic powder, salt, and pepper. Mix well and form small meatballs.
- Heat olive oil in a large pot over medium heat.
- Gently brown the meatballs in the pot for about 5 minutes, turning occasionally.
- Add soup to the pot and bring to a simmer.
- Gently drop meatballs into the simmering soup.
- Add small pasta to the soup.
- Cook until meatballs and pasta are cooked through, about 15-20 minutes. Ensure the internal temperature of the meatballs reaches 160°F (71°C).
- Serve hot.
