Moroccan Potato, Chickpea, and Tomato Tagine Bowl

  1. Heat extra virgin olive oil in a pot or deep pan over medium heat. Add diced potatoes and onion and cook until slightly softened, about 5 minutes.
  2. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in turmeric, cumin, cinnamon, and ras el hanout. Cook for 30 seconds, stirring constantly, until fragrant.
  4. Add chickpeas, diced tomatoes, and vegetable broth. Bring to a simmer, then reduce heat, cover, and cook for 30 minutes, or until the potatoes are very tender.
  5. Season with salt and freshly ground black pepper to taste.
  6. Stir in chopped fresh cilantro, if using.
  7. Serve hot over cooked couscous. Enjoy!
