Moroccan Potato, Chickpea, and Tomato Tagine Bowl
A fragrant Moroccan-inspired tagine bowl with potatoes, chickpeas, tomatoes, and warm spices.
Ingredients
- 1 medium, diced Potatoes
- 1/2 cup, cooked Chickpeas
- 1/2 cup, diced Tomatoes
- 1/4 cup, diced Onion
- 2 cloves, minced Garlic
- 1 tsp, grated Ginger
- 1 tsp Turmeric
- 1 tsp Cumin
- 1/2 tsp Cinnamon
- 1/2 tsp Ras El Hanout (Moroccan Spice Blend)
- 3/4 cup Vegetable Broth
- 2 tbsp Extra Virgin Olive Oil
- to taste Salt and Freshly Ground Black Pepper
- 1 cup Cooked Couscous
- 1 tbsp, chopped Fresh Cilantro (optional)
Instructions
- Heat extra virgin olive oil in a pot or deep pan over medium heat. Add diced potatoes and onion and cook until slightly softened, about 5 minutes.
- Add minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in turmeric, cumin, cinnamon, and ras el hanout. Cook for 30 seconds, stirring constantly, until fragrant.
- Add chickpeas, diced tomatoes, and vegetable broth. Bring to a simmer, then reduce heat, cover, and cook for 30 minutes, or until the potatoes are very tender.
- Season with salt and freshly ground black pepper to taste.
- Stir in chopped fresh cilantro, if using.
- Serve hot over cooked couscous. Enjoy!
