  1. Preheat oven to 350°F (175°C). Grease a muffin tin thoroughly with olive oil or use silicone muffin liners.
  2. In a bowl, whisk together eggs, ricotta cheese, mozzarella cheese, Italian seasoning, garlic powder, parsley, parmesan cheese, and a pinch of black pepper.
  3. Pour the mixture into the muffin tin, filling each cup about 3/4 full. Ensure even distribution of ingredients.
  4. Bake for 20-25 minutes, or until the egg bites are set and lightly golden. A toothpick inserted into the center should come out clean.
  5. Let cool slightly in the muffin tin before carefully removing. Serve warm.
