Italian Herb & Cheese Egg Bites
Individual egg bites infused with Italian herbs and cheese, perfect for a quick and easy low-carb breakfast.
Ingredients
- 6 large Eggs
- 1/2 cup, whole milk Ricotta cheese
- 1/4 cup, part-skim Shredded mozzarella cheese
- 1 tsp Italian seasoning
- 1/4 tsp Garlic powder
- 2 tbsp Chopped fresh parsley
- 2 tbsp Grated parmesan cheese
- Pinch Freshly ground black pepper
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin thoroughly with olive oil or use silicone muffin liners.
- In a bowl, whisk together eggs, ricotta cheese, mozzarella cheese, Italian seasoning, garlic powder, parsley, parmesan cheese, and a pinch of black pepper.
- Pour the mixture into the muffin tin, filling each cup about 3/4 full. Ensure even distribution of ingredients.
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden. A toothpick inserted into the center should come out clean.
- Let cool slightly in the muffin tin before carefully removing. Serve warm.
