Mexican Breakfast Scramble
A flavorful and protein-packed breakfast scramble featuring black beans and Mexican spices.
Ingredients
- 8 large Eggs
- 1 can (15oz), rinsed and drained Black beans
- 1 cup Diced tomatoes
- 1/2 medium, chopped Onion
- 1 tbsp Chili powder
- 1 tsp Cumin
- 1 tbsp Olive oil
- 1/2 tsp Smoked paprika
- 2 tbsp, chopped Fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Add diced tomatoes, chili powder, cumin, and smoked paprika; cook for 2 minutes.
- Stir in rinsed and drained black beans and cook for another 3 minutes.
- Whisk eggs in a separate bowl and pour into the skillet.
- Scramble eggs until cooked through but still slightly moist.
- Garnish with fresh cilantro and serve immediately.
