Mediterranean Tomato and Potato Salad with Lemon-Herb Dressing
A vibrant Mediterranean salad with roasted potatoes, tomatoes, fresh herbs, and a zesty lemon-herb dressing.
Ingredients
- 1 medium Yukon Gold Potatoes
- 1 cup mixed cherry tomatoes, halved Tomatoes
- 1/2 cup diced English cucumber Cucumber
- 1/4 cup thinly sliced red onion Red Onion
- 2 tbsp chopped fresh parsley Fresh Parsley
- 1 tbsp chopped fresh mint Fresh Mint
- 2 tbsp Lemon Juice
- 3 tbsp Extra Virgin Olive Oil
- 1 clove minced Garlic
- to taste Salt and Black Pepper
Instructions
- Preheat oven to 400°F (200°C).
- Dice the potatoes into 1-inch pieces. Toss with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, or until golden brown and tender.
- In a bowl, combine roasted potatoes, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
- In a separate small bowl, whisk together lemon juice, 2 tablespoons olive oil, minced garlic, chopped parsley, and mint. Season with salt and pepper to taste.
- Pour the dressing over the salad and toss gently.
- Serve immediately or chill for later.
