  1. Preheat oven to 400°F (200°C).
  2. Dice the potatoes into 1-inch pieces. Toss with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, or until golden brown and tender.
  3. In a bowl, combine roasted potatoes, halved cherry tomatoes, diced cucumber, and thinly sliced red onion.
  4. In a separate small bowl, whisk together lemon juice, 2 tablespoons olive oil, minced garlic, chopped parsley, and mint. Season with salt and pepper to taste.
  5. Pour the dressing over the salad and toss gently.
  6. Serve immediately or chill for later.
