Italian Sausage and Pepper Stir-Fry with Egg Noodles
A quick and easy stir-fry with Italian sausage, colorful peppers, and egg noodles, perfect for a weeknight dinner.
Ingredients
- 500 g Smoked Sausages
- 1 pack Green or Red Peppers
- 1 medium Onion
- 3 cloves Garlic
- 300 g Egg Noodles
- 2 tbsp Olive Oil
- 1.5 tsp Italian Seasoning
- 1/4 tsp Red Pepper Flakes
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 2 tbsp chopped Fresh Parsley
Instructions
- Cook egg noodles according to package directions. Reserve 1/2 cup of pasta water before draining.
- While noodles are cooking, slice sausage into rounds and peppers and onion into strips.
- Mince garlic.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add sausage, peppers, and onion to the skillet and cook, stirring occasionally, until sausage is browned and vegetables are tender-crisp, about 7-9 minutes.
- Add garlic, Italian seasoning, and red pepper flakes and cook for another minute until fragrant.
- Drain noodles well and add them to the skillet with the sausage and vegetables.
- Toss to combine. Add reserved pasta water, a tablespoon at a time, if needed to create a light sauce.
- Season with salt and pepper to taste. Stir in fresh parsley just before serving. Serve immediately.
