  1. Cook egg noodles according to package directions. Reserve 1/2 cup of pasta water before draining.
  2. While noodles are cooking, slice sausage into rounds and peppers and onion into strips.
  3. Mince garlic.
  4. Heat olive oil in a large skillet or wok over medium-high heat.
  5. Add sausage, peppers, and onion to the skillet and cook, stirring occasionally, until sausage is browned and vegetables are tender-crisp, about 7-9 minutes.
  6. Add garlic, Italian seasoning, and red pepper flakes and cook for another minute until fragrant.
  7. Drain noodles well and add them to the skillet with the sausage and vegetables.
  8. Toss to combine. Add reserved pasta water, a tablespoon at a time, if needed to create a light sauce.
  9. Season with salt and pepper to taste. Stir in fresh parsley just before serving. Serve immediately.
