  1. Heat olive oil in a large skillet over medium heat.
  2. Add sun-dried tomatoes and mushrooms, cooking until softened, about 5 minutes. Their oil will infuse the mushrooms.
  3. Add shredded chicken and Italian seasoning, cook for another 3 minutes, stirring occasionally.
  4. Whisk eggs in a bowl with salt and pepper and pour into the skillet.
  5. Gently scramble eggs until almost cooked through.
  6. Stir in green onions and crumbled feta cheese during the last minute of cooking.
  7. Serve immediately.
