Mediterranean Chicken & Veggie Scramble
An enhanced gluten-free breakfast packed with Mediterranean flavors and protein.
Ingredients
- 8 Large White Eggs
- 2 cups, cooked, shredded Chicken
- 1 cup, sliced Sliced Mushrooms
- 1/4 cup, chopped Green Onions
- 2 tbsp Olive Oil
- 1 tsp Italian Seasoning
- 1/4 cup, crumbled Feta Cheese
- 1/4 cup, oil-packed, drained and chopped Sun-dried Tomatoes
- to taste Salt and Black Pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sun-dried tomatoes and mushrooms, cooking until softened, about 5 minutes. Their oil will infuse the mushrooms.
- Add shredded chicken and Italian seasoning, cook for another 3 minutes, stirring occasionally.
- Whisk eggs in a bowl with salt and pepper and pour into the skillet.
- Gently scramble eggs until almost cooked through.
- Stir in green onions and crumbled feta cheese during the last minute of cooking.
- Serve immediately.
