Pork and Tomato Scramble
Ingredients
- 250g Ground Pork
- 2 medium, diced Tomatoes
- 6 large Eggs
- 75g, chopped Spinach
- 1 tbsp Olive Oil
- 1 clove, minced Garlic
- 1/2 tsp Dried Oregano
- Pinch (optional) Red Pepper Flakes
- to taste Salt and Black Pepper
Instructions
- Heat olive oil in a large pan over medium heat.
- Add minced garlic and red pepper flakes (if using), and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
- Add ground pork and dried oregano and cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Drain any excess fat.
- Add diced tomatoes and cook for another 2-3 minutes until slightly softened.
- Add chopped spinach and cook until wilted, about 1-2 minutes.
- Whisk eggs with salt and black pepper in a separate bowl.
- Pour the egg mixture into the pan and scramble with the pork and tomato mixture until the eggs are cooked through but still slightly moist. Avoid overcooking.
- Serve immediately.
