Pork and Tomato Scramble

  1. Heat olive oil in a large pan over medium heat.
  2. Add minced garlic and red pepper flakes (if using), and sauté for about 30 seconds until fragrant, being careful not to burn the garlic.
  3. Add ground pork and dried oregano and cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Drain any excess fat.
  4. Add diced tomatoes and cook for another 2-3 minutes until slightly softened.
  5. Add chopped spinach and cook until wilted, about 1-2 minutes.
  6. Whisk eggs with salt and black pepper in a separate bowl.
  7. Pour the egg mixture into the pan and scramble with the pork and tomato mixture until the eggs are cooked through but still slightly moist. Avoid overcooking.
  8. Serve immediately.
