High-Protein Chicken Thigh Salad with Apple Cider Vinaigrette
Ingredients
- 2 lbs Fresh AIR-CHILLED Boneless Skinless Chicken Thighs
- 2 tbsp Organic Apple Cider Vinegar
- 3 tbsp Olive Oil
- 1/2 medium Sweet Onions
- 1 tbsp (fresh, chopped parsley or dill) Compliments Organic Herbs
- 1/2 tsp Black Pepper
- 1/2 tsp Onion Powder
- 1/4 tsp Paprika
- 1 head, chopped Organic Romaine Hearts
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, marinate chicken thighs with olive oil, apple cider vinegar, chopped onion, organic herbs, black pepper, onion powder, and paprika.
- Bake chicken thighs for 20-25 minutes, or until cooked through.
- Let the chicken cool, then chop into bite-sized pieces.
- Combine chopped chicken with chopped organic romaine hearts.
- Adjust seasoning to taste and serve.
