  1. Drain and rinse chickpeas thoroughly. Pat dry with a paper towel.
  2. In a food processor, blend fresh mint leaves, garlic, green chili, lemon juice, and a pinch of salt to make mint chutney. Add a tablespoon of water if needed to achieve a smooth consistency. Taste and adjust seasonings.
  3. In a bowl, mash chickpeas lightly with a fork or potato masher. Leave some whole for texture.
  4. Add cumin powder, chaat masala, amchur powder, finely chopped red onion, and salt. Mix well.
  5. Spread mint chutney generously on both halves of the buns.
  6. Fill with spiced chickpea mixture. Serve immediately or wrap for later.
