Spiced Chickpea Salad Sandwich with Mint Chutney
Flavorful chickpea salad mashed with spices and herbs, served in buns with a spread of refreshing mint chutney.
Ingredients
- 1 can Chickpeas
- 2 Buns
- 1/4 cup Fresh Mint
- 1 clove Garlic
- 1 tbsp Lemon Juice
- 1 (adjust to taste) Green Chili
- 1/2 tsp Cumin Powder
- 1/2 tsp Chaat Masala
- 1/4 tsp Amchur (Dry Mango Powder)
- 1/4 cup, finely chopped Red Onion
- To taste Salt
Instructions
- Drain and rinse chickpeas thoroughly. Pat dry with a paper towel.
- In a food processor, blend fresh mint leaves, garlic, green chili, lemon juice, and a pinch of salt to make mint chutney. Add a tablespoon of water if needed to achieve a smooth consistency. Taste and adjust seasonings.
- In a bowl, mash chickpeas lightly with a fork or potato masher. Leave some whole for texture.
- Add cumin powder, chaat masala, amchur powder, finely chopped red onion, and salt. Mix well.
- Spread mint chutney generously on both halves of the buns.
- Fill with spiced chickpea mixture. Serve immediately or wrap for later.
