Mexican-Spiced Cabbage and Potato Tacos
Vegan tacos filled with a flavorful mixture of spiced cabbage and potatoes, topped with your favorite salsa.
Ingredients
- 2 medium, diced Potatoes
- 1/4 medium head, shredded Cabbage
- 2 tbsp Taco Seasoning
- 1/2 medium, diced Green Pepper
- 1/2 medium, diced Onion
- 6 Corn or Flour Tortillas
- To taste Salsa
- 2 tbsp Olive Oil
- 1, cut into wedges Lime
- 1/2 Optional: Avocado, diced
Instructions
- Dice potatoes, green pepper, and onions into small, uniform pieces. Shred cabbage finely.
- Heat olive oil in a large skillet over medium heat.
- Add onions and green pepper, and sauté until softened, about 5 minutes.
- Add potatoes and cook, stirring occasionally, until tender and lightly browned, about 15-20 minutes. If potatoes start to stick, add a tablespoon of water.
- Stir in shredded cabbage and taco seasoning. Cook until cabbage is slightly softened and well combined with the spices, about 5 minutes.
- Warm tortillas according to package instructions or by charring lightly on an open flame or dry skillet.
- Fill each tortilla with the spiced cabbage and potato mixture. Top with salsa and diced avocado (optional).
- Serve immediately with lime wedges for squeezing over the tacos.
