Mexican-Spiced Cabbage and Potato Tacos

  1. Dice potatoes, green pepper, and onions into small, uniform pieces. Shred cabbage finely.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onions and green pepper, and sauté until softened, about 5 minutes.
  4. Add potatoes and cook, stirring occasionally, until tender and lightly browned, about 15-20 minutes. If potatoes start to stick, add a tablespoon of water.
  5. Stir in shredded cabbage and taco seasoning. Cook until cabbage is slightly softened and well combined with the spices, about 5 minutes.
  6. Warm tortillas according to package instructions or by charring lightly on an open flame or dry skillet.
  7. Fill each tortilla with the spiced cabbage and potato mixture. Top with salsa and diced avocado (optional).
  8. Serve immediately with lime wedges for squeezing over the tacos.
