Italian Chickpea Pasta (Vegetarian, Gluten-Free, Dairy-Free)

  1. Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat. Add minced garlic and red pepper flakes, sauté until fragrant but not browned.
  3. Add chickpeas and tomato paste to the pan, stirring well to combine. Cook for 2-3 minutes to deepen the flavor of the tomato paste.
  4. Season with oregano, salt, and freshly ground black pepper. Add a splash of the reserved pasta water to create a light sauce.
  5. Simmer for 5 minutes, then add cooked pasta and fresh basil to the sauce. Toss to combine, adding more pasta water if needed to achieve desired consistency.
  6. Serve immediately, garnished with additional fresh basil.
