Italian Chickpea Pasta (Vegetarian, Gluten-Free, Dairy-Free)
A simple and satisfying pasta dish with chickpeas, tomatoes, and herbs.
Ingredients
- 100 g Pasta
- 2 tbsp Tomato Paste
- 3/4 cup Cooked Chickpeas
- 2 cloves Garlic, minced
- 2 tbsp Olive Oil
- 1/2 tsp Dried Oregano
- 1/4 tsp Red Pepper Flakes
- 2 tbsp Fresh Basil, chopped
- to taste Salt and Freshly Ground Black Pepper
Instructions
- Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large pan over medium heat. Add minced garlic and red pepper flakes, sauté until fragrant but not browned.
- Add chickpeas and tomato paste to the pan, stirring well to combine. Cook for 2-3 minutes to deepen the flavor of the tomato paste.
- Season with oregano, salt, and freshly ground black pepper. Add a splash of the reserved pasta water to create a light sauce.
- Simmer for 5 minutes, then add cooked pasta and fresh basil to the sauce. Toss to combine, adding more pasta water if needed to achieve desired consistency.
- Serve immediately, garnished with additional fresh basil.
